One evening a few weeks ago I emptied the contents of my crisper drawer onto my counter top. I consciously order more vegetables than I think we need every time I order groceries. It’s part of my grocery ordering strategy to ensure we are eating healthy meals all week long. If you want to read more about my strategy, here is a link The Art of Grocery Ordering.
I had also purchesed 10 pounds of chicken breast that were on a BOGO deal at my local grocery store. I needed to find a way to use everything before it went past the expiration date. I was inspired to create freezer meals, because I haven’t had time to cook recently. So, I chopped up all the chicken and prepped all the vegetables and made a list.
The result was 4 Keto recipes. I went with sheet pan dinners for the ease. But these meals could be prepared in an air fryer, pan or even instant pot. I then pulled out all my other available ingredients, zip lock bags and got to inventing.
These are the meals that resulted from all my hard work. I made two of each meal, making a total of 8 dinners with two servings each. Just for fun, I also went back to total out the cost of the meals. It was all under $50. I have a list with the items and the totals at the bottom of the article.
