The casserole or hot dish, depending on your where you grew up, makes an easy and delicious dinner. Casserole’s featured heavily in my childhood memories. Easy Beef & Potato Hot Dish is my husbands favorite recipe from his childhood. He grew up outside of Chicago and this one came from a church cookbook. Clearly I have made additions and alterations to pump up the flavor, because I couldn’t help myself!

I really appreciate a casserole for it’s ease of cooking and preparation. What I don’t like are all the separate dishes needed to sauté, mix and then bake. So I fixed that, I used my largest cast iron skillet, making this into a one dish wonder!
Easy Beef & Potato Casserole

Notes
Allow to cool for 5-10 minutes prior to serving. Garnish with bacon and scallions. Serve with a vegetable or salad of choice.
Ingredients
- 1/4 pound bacon
- 1 pound ground beef
- 1 jalepano, chopped
- 4 cloves garlic, minced
- 2 cups corn cornels
- 1 can creamed corn
- 2 Idaho potatoes, sliced super thin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley
- 2 spring onions, chopped
- 1 cup of cheese
Instructions
- Preheat oven to 350 degrees.
- In a large oven safe pan saute bacon.
- Remove from pan when crisp and save for a garnish.
- Brown ground beef.
- Drain off any extra fat, leaving about a tablespoon in for cooking.
- Add onion, garlic and jalapeno cooking until translucent.
- Add spices, herb and seasoning to pan, stir for 30 seconds.
- Turn off heat.
- Add corn stirring to combine.
- Top with sliced potato until everything is covered in a single layer.
- Top with creamed corn and cheese.
- Bake for 20 minutes or until cheese is browned.
- Garnish with bacon and spring onions.
