Mississippi Chicken is my daughters absolute favorite way that I prepare chicken. It’s spicy, tangy and creamy all at the same time. Preparing the recipe in the Instant Pot means dinner will be done in less than 30 minutes with almost no prep work. The perfect weeknight meal.

I first started making this recipe years ago. My husband loved Mississippi beef but my daughter prefers chicken. She prefers to eat it on a toasted whole wheat bun or over buttered egg noodles. We also use the leftovers to make cheesy quesadillas or spicy chicken nachos.
