Okay, Sunday is meant for rest and relaxation. Pancakes and time with family are fond memory staples for many of us. Why can’t those Sunday morning breakfasts be easy and delicious? They can with this simple recipe!

Quick back story to this recipe before we dive into it. Almost every Sunday is my husband and my day off together, so it has become our ritual to go get Sunday Brunch. Our very favorite place to get brunch is a local restaurant that makes everything from scratch. We will go there specifically for their banana crunch pancakes.
They. Are. Epic. I crave them. The restaurant is so popular and has very limited seating, so it is common to wait for a table for 30+ minutes. Also, Covid restrictions and precautions became the norm over the past year, so it became rare that we would venture out to restaurants. Also, I just really wanted to see if I could replicate this recipe.
So this past Sunday, I went for it. Amazing! I couldn’t even get a good photo once they were done because my husband ate them before I could finish cooking. Please, make these pancakes and comment here on how your family and friends felt about them. I really do not think they will disappoint!
Ingredients:
- 2 cups of pancake mix (I used Aunt Jemima because it is the very best)
- 1 1/2 cups water
- 1/2 cup chopped candied Pecans
- 1 banana thinly sliced
- Pam spray for cooking
Directions:
In a medium mixing bowl, mix the pancake mix and water until fluffy and fully blended. If you chose to get a different pancake mix, follow the directions on that box versus this one. Chop your pecans and slice your bananas. You want to ensure this is done before you begin so that you can move quickly.
In a small non-stick pan heated to a medium low heat, spray with pam and pour about 1/4 a cup of the batter into the center of the pan. Spread the batter quickly with a spoon to spread it into a thick circle. This part is important! Keep an eye on that batter. In about 2-3 minutes you will see large bubbles begin. Once you see that, sprinkle your pecans and place your banana onto the batter.
With a large spatula, get under the pancake and carefully flip it over. The pancake will take about another minute or two to finish cooking and then remove it from your pan.
I serve this with warmed syrup and soft butter. You will not be disappointed!
