Dump and Bake recipes are one of my favorite go-to week night meals. This recipe uses uncooked brown rice, making the preparation super quick and easy. Cheesy Taco Rice can be served on it’s own or as a side to grilled chicken or Carne Asanda. I like to serve it with a roasted corn salad and steamed broccoli. Enjoy!

My tween daughter eats very little meat, she prefers beans to be her main source of protein. I created this recipe specifically with her in mind. Tex-Mex is always a big hit with the whole family. I pulled this one together in less than 5 minutes and popped it in the oven. I served it with a corn salad, a side salad or broccoli would be just as delicious.
When making this recipe I used a prepackaged taco seasoning mix, I wanted to keep things super simple. It’s better for you and contains less sodium if you make your own, here is the link to my sisters go to recipe Homemade Spicy Taco Seasoning.
I love that this recipe contains pantry staples that I typically keep on hand, allowing me to throw this together whenever the mood strikes. It’s also a budget friendly meal, coming in around $5 for the whole pan. For my family of three this will serve us dinner more than once, I plan on using it as a quesadilla filling later in the week, yummy!
Dump-and-Bake Cheesy Taco Rice Casserole
Notes
Allow to cool prior to serving. Top with cheese, sour cream or sliced jalapeno.
Ingredients
- 1 (10.5 oz) can condensed cheddar cheese soup
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 1 (15.5 oz) can black beans, drained
- 1 cup brown rice
- 1 packet taco seasoning
- 3 cups water
- 5 green onions, chopped
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375F (190C). Spray baking dish of choice with cooking spray.
- Add cheddar cheese soup, water and seasoning packet to prepared dish. Whisk together until completely combined.
- Stir in uncooked rice, black beans, tomatoes with green chilies, and green onions.
- Cover tightly with lid or foil and bake for 1 hour 20 minutes, or until liquid is absorbed and the rice is tender.
- Remove lid, top with shredded cheddar cheese, and return to oven to melt cheese.
